MEMBER PARTICIPATION
We encourage members to participate in all stages of the winemaking process. To comply with the guidelines of the California Cult Classics U-Vin licence, all members are required to participate in Sessions 1 and 6. Members are encouraged to participate in all sessions if they wish.
SESSION 1- Orientation: A short seminar focusing on the art of
winemaking and the adding of yeast to begin fermentation.
SESSION 2 - Fermentation Process: Wine must is "pumped over" and
"punched down" while in the fermentation tanks.
SESSION 3 - Pressing and Racking: Wine "must" is "pressed out" and the wine is "racked" into stainless steel tanks.
SESSION 4 - Racking into Barrels: Wine is racked into barrels and aged in the barrel cellar.
SESSION 5 - Cold Stabilization: Wine is racked from barrels into stainless
steel tanks for cold stabilization. This process releases tartrates and
stabilizes the wine for bottling.
SESSION 6 - Bottling and Labeling: Wine is bottled and labeled using a
state-of-the-art European monobloc bottling line and labeler.
